Chef Sébastien Di Noto composes a gourmet menu inspired by local, seasonal produce. A subtle marriage of local ingredients and flavours from further afield flourishes in an array of colourful dishes. Our gourmet restaurant in Burgundy serves a selection of refined dishes across two menus: the “Tradition” Menu and the “Comtesse de Fleurville” Menu. Both are inspired by a rich and subtle mix of local flavours: foie gras, Bresse pigeon, Charolais meat, langoustines, Burgundy cheeses and gourmet desserts. An “à la carte” option is available too.

Legendary chef Alain Ducasse has honoured our restaurant including it in the "Tables Remarquables" group, with "bonnes tables" accreditation.

A cuisine full of finesse

From Chef Sébastien Di Noto

Before returning to his native Burgundy, the chef at Château de Fleurville, Sébastien Di Noto, earned his stripes in a number of prestigious establishments. After working in Luxembourg, Belgium and Ireland, he settled in Provence, at L'Isle-sur-la-Sorgue where he was awarded a Michelin star at restaurant Le Vivier. Today, in the heart of Saône-et-Loire, he focuses his talent and experience on the gourmet cuisine of Burgundy, and has been doing so for the past ten years, to the delight of our guests.
